How to make it

    Add the pisco, fresh lime juice, simple syrup, egg white and angostura bitters to a shaker without ice and dry-shake hard for 10–15 seconds to whip up the egg white.

    Add ice and shake again for 10–15 seconds until the shaker is frosted and cold.

    Double-strain into a chilled coupe glass.

    Garnish with three drops of angostura bitters on the foam.
