Ramos Gin Fizz
The famously fluffy New Orleans gin fizz with cream, citrus, egg white and orange flower water — labor-intensive to shake, so batching the liquid base saves real time behind the bar.

How to make it

Add the gin, fresh lemon juice, fresh lime juice, simple syrup, heavy cream and egg white to a shaker without ice and dry-shake hard for 10–15 seconds to whip up the egg white.

Add ice and shake again for 10–15 seconds until the shaker is frosted and cold.
